Course Description

The course will focus on the issue of the role to play by the wholesale markets, link between the farmers and the consumer. The issue to feed the large cities with high quality and fresh products is, for the politician and local authorities, a key element of food safety and social sustainability. The models of wholesale markets are different for large cities like Moscow, Mexico, Teheran, Nairobi, Abidjan, Delhi, Shanghai, Manila. The fight for ensuring food safety and quality products to populations has become a common goal in most public policies, at a local, national and international level. How to answer to the consumer requirements? What is the role of public institutions in the sanitary control? New challenges of fresh e-trade? How to supply daily thousands of restaurants, food shops, canteens every day with fresh products? How can me organized the value-added chains for supplying such market? What is the legal framework to set up for operating such infrastructure? A visit of Rungis International Market, Paris City, will be organized in the workshop to analyze and discover the concept of the unique food hub. Rungis International Market is the first wholesale market in the world (3 million tons of fresh produces coming from all over the world, USD10 billions of turnover, 12.000 employees for 1,200 companies established on the market). With this first analysis, the student will be responsible for analyzing concept of other cities like: Casablanca, Dubai, Manila, Almaty.

1 Visit of Rungis International market. 2 Brainstoriming of the visit” and benchmark of different models in African and Asian region. 3 Workshops with groups of students for analyzing 4 cities concepts.
